  • ¼ cup white wine
  • 1/3 onion, sliced
  • 4-5 mushrooms, sliced
  • 1 garlic clove, thinly sliced
  • Salt and pepper

Directions

  1. Drizzle a small skillet with olive oil. Arrange onion slices, garlic slices, and a sprig each of rosemary and thyme.
  2. Turn on to medium heat and allow the garlic and onions to begin to cook.
  3. When the onions are on their way to translucent, add in the mushrooms and give a stir.
  4. Allow everything to sauté until cooked through and slightly golden.

Chicken

  1. Remove the onions and mushrooms, setting aside to eat when the chicken is finished.
  2. Deglaze the pan with the white wine, adding in a little more fresh thyme and rosemary.
  3. Add your chicken and cook until it’s almost done – you’re essentially poaching the chicken in the aromatic white wine.
