White Wine Chicken Sauté Recipe

White Wine Chicken Sauté Recipe
Ingredients
- Freshly cut sprigs of thyme and rosemary
- 1 Chicken breast, cut into pieces
- ¼ cup white wine
- 1/3 onion, sliced
- 4-5 mushrooms, sliced
- 1 garlic clove, thinly sliced
- Salt and pepper
Directions
- Drizzle a small skillet with olive oil. Arrange onion slices, garlic slices, and a sprig each of rosemary and thyme.
- Turn on to medium heat and allow the garlic and onions to begin to cook.
- When the onions are on their way to translucent, add in the mushrooms and give a stir.
- Allow everything to sauté until cooked through and slightly golden.
Chicken
- Remove the onions and mushrooms, setting aside to eat when the chicken is finished.
- Deglaze the pan with the white wine, adding in a little more fresh thyme and rosemary.
- Add your chicken and cook until it’s almost done – you’re essentially poaching the chicken in the aromatic white wine.
To Finish
- Pour out the wine wine, garlic, and herbs, keeping the chicken in the pan.
- Turn the heat up slightly and allow the chicken to get golden on one side.
- Sprinkle with salt and pepper.
- Arrange on your plate and drizzle with some of the reduced herb wine, also adding in some of the herbs and garlic. Enjoy!
Other Variations:
Any one of these could be substituted:
- Verjus
- White grape or apple juice
- Add about a tablespoon of white vinegar or lemon juice per cup of stock or fruit juice
